I didn't see anything like those errors on either my G4 or my MacBook  
(both running 10.5.4).  You might check and see if anything looked  
suspicious yet earlier in the build output.

I've posted the log here:

and cc'ed the maintainer, in case he has seen this issue before.

I tried this on my G4 and found no differences in the build output  
until the test section--on my machine the tests all succeeded, rather  
than failing.  As a reminder for the list, the failure mode is of the  
form

/bin/sh: line 1: 93331 Illegal instruction     MPFR_QUIET=1 ${dir}$tst
FAIL: tset_f

Illegal instruction sounds like an executable that was compiled for a
the wrong architecture.

Did you build the gmp and gmp-shlibs packages on your machine or did you
install them from binary? What processor are you on, G4 or G5?

Maybe it would be worth stashing a file in each .deb file that has  
some stats about the machine that built it, like the hostname, OS  
version, Xcode version, and hardware version.  That might help in  
tracing down sources of non-identicality in builds that aren't due to  
package management.

Excuse me, but I give up installing evince. My problem appears after I  
had installed a new fink distribution. But this problem and others  
conduct me to re-install my old fink whith Time Machine.

But a new problem appears now whith update-all and system-tetex. I run  
for long time 'remove system-tetex' ! How to delete it completely ?

Try

sudo dpkg -r --force-depends system-tetex

if the "fink" command isn't letting you do it because of  
dependencies.  Then reinstall kpathsea4-shlibs.  Presumably you'll  
need to install either tetex or ptex, too.

For what it's worth, I am having exactly the same problem with
libmpfr1-2.3.1-1, the same 55 of 133 tests failed.  This is with
a brand new fink (re-)installation on:

OK.  So Martin's question about whether your gmp was built on your  
machine or elsewhere would apply.  If you run

fink dumpinfo -fdebfile gmp gmp-shlibs

That will say where the binaries are stored.  If they're in /sw/fink/
dists, then they were probably built on your system (unless you copied  
your Fink tree over from another computer.  If they're in /sw/var/
cache/apt/archives, then they were installed from a binary--and  
possibly built on a G5.

I get:
