In many cases nothing.
I.e. they don't use Vacuum assisted brakes, they use electrically assisted
brakes.
Many of the older "production" EVs just used manual (non-assisted) brakes.

The half-dozen production EVs in my yard all use a Pierburg diagphram
pump which looks similar to the Gast and Thomas ones that are
available from EV part suppliers.  It is very reliable.

Have a look on this page, the pump used is the black one in the picture:

I guess if you try and run the old heater/AC unit they need vac. to open and
close doors, and maybe brakes if you do not fix it to run with out.

Hello Evan,

Which one of the Pierburg diagphram pumps make the lease noise when starting
out and/or at the maximum vacuum?

My GMC belt driven unit that is use on GMC diesel engines, making a clicking
noise at start up, but when it gets up to 15 in.hg. it becomes very quite.

Roland

Unless it's a fiero.  They use electric actuators to move the doors.

I'm in the middle of a conversion project and decided to go with the DES
vacuum pump, available from Metric Mind. (http://www.metricmind.com/pump.htm )

My research showed that it's supposed to be quiter than the Gast pumps but
this is unconfirmed as I haven’t powered it up yet.  It's manufactured
specifically for electric vehicles by MES-DEA Switzerland.

Kinda pricey but comparable to the complete setup for the Gast pump with all
of the other parts you have to put together.  For example, at
http://www.evsource.com/tls_braking_system.php .

Strongly considering an EV conversion at the moment...

Well, it's not production for an EV, but mine was production for
Volkswagons. I have a used mechanical vacuum pump from a VW rabbit. It was
cheap and it pretty much silent. For a couple of dollars I picked up a
rebuild kit and used a piece of aluminum to mount it to the front of my
motor. I'll let you know how it works in the long run.
