To achieve a (classical organ) tremulant with Fluidsynth or sfz, you need to do two things:

(1)  In jOrgan, set up the Tremulant element as a Switch Filter with the following messages

Name:  Engaged;   Status:  set 176;  Data 1:  set 1;  Data 2:  set 42
Name:  Disengaged;   Status:  set 176;  Data 1:  set 1;  Data 2:  set 0

(Note: I *think* the Data 2: set 42 value governs trem depth - so you can adjust this to taste)

(2) Edit the soundfont using Vienna or Swami etc.

Either - set the Vibrato LFO Frequency to an appropriate value for each stop that you want to trem.
You can do this in the Instrument Pool by adding a Global Zone to each instrument and setting the Vibrato LFO frequency at about 4 Hz (+ or - according to taste).

Or - (probably simpler) you can do it in the Preset Section by setting the Vibrato LFO frequency to about 0.48 (+ or - according to taste)

Leave the other LFO parameters at their default settings.
