Since you're talking about interceptors, I'm assuming that you're working
with Mule 1.x
An interceptor accepts an Invocation object which contains a reference to
the current event (from which you can extract the UMOMessage) and the
UMODescriptor in use for that service component.
You should be able to get the endpoint URI from these items.
