Visually, you could do some really nice stuff with Ajax drag-and-drop, and even the Prototype-UI stuff Nicholas has been working on to show/compare multiple sets of data if you wanted to.

Like you said, though--the domain model would be hard.  Anyone know a genetics expert?  From the process improvement work I do, that would be my big set of advice...don't try to tackle the domain by trying to learn it yourself.  Find an expert and give them an application THEY would want to use!

It sounds fun, but you can see how limited my skills are by the questions you have been answering!
