Is it possible to remove the Mac Address from logging?

logging is done by the firewall software, not fwbuilder. The answer to  
your question depends on whether your target firewall has knobs to  
control log record format.

I do not believe iptables has any controls to define exactly what is  
being logged except for a few things such as tcp and ip options and  
such. See man iptables.

I can't tell  of the top of my head about other platforms.
