for stream recording refer to http://livedocs.adobe.com/flash/9.0/ActionScriptLangRefV3/. For OpenLaszlo, similar applies (http://www.openlaszlo.org/lps4.1/docs/reference/lz.mediastream.html :).

If I remember correctly, red5 works like FMS in this regard :). Also http://www.joachim-bauch.de/tutorials/red5/HOWTO-StreamCustomDirectories.txt should be interesting in such scenario.

I don't know what about live stream publishing do you mean. Each recorded or just published stream is instantly available to others, but for server streams refer to http://dl.fancycode.com/red5/api/org/red5/server/stream/package-summary.html
